When looking for the perfect degrees of steak doneness of youe meat you must consider that the cooking time and temperature could and probably would change according to the method of preparation and the size of the steak you want to grill. So before going any further, just remember that.
To test the level of doneness of your steak or burger or even roasts, it’s best to use a meat thermometer or one of those instant-read thermometer, you should insert it through the side of the steak and the tip should hit the center but without touching any bone or fat, otherwise it will give a bad reading. When you see the heat at 5°F below your desired doneness level, this is the time to take it out of the fire. Why? Because the temperatures will continue to rise even while the steak is resting, so make sure to take it out at the appropriate time.
The recommended cooking guidelines by the USDA are to cook roasts and steaks at 145°F for medium and let it rest for at least three minutes after for the fluids to give their taste. Ground beef should be cooked at a minimum of 160°F for well done doneness. Don’t just rely on the color of the steak and your eyes to check the degree of doneness, use a thermometer.

If the steak is thick enough, you can just lift it with your hand and check it, but again we recommend using a thermometer to check the doneness of the steak
