1 : Buy some chicken legs with the tights attach so you will have a lot of skin to wrap everything in the end
2 : There are many things that you can make for the stuffing , but in this recipe the cook choose goat cheese, cooked spinach and pecans. the picture below shows them mixed together and then quartered and chilled
3 : This next part may be tricky to some people, its the d-boning of the chicken , if you don’t know how to do it you can ask your local butcher to do it, or just look up on youtube for how to videos like this : https://www.youtube.com/watch?v=LWMMm1D4zYQ
4 : Now comes the gravy part. use the bones from the chicken and cut them to smaller pieces and throw them into a pot with some veggies and water . in this gravy there is : Green onion ,thyme , leaves ,celery and garlic , the guy added white onion and carrots after he took the pic so dont forget
5 : Now if you feel your chicken pieces are not big enough you can wrap them in plastic wrap and roll a rolling pin on the suckers, then stuff the chicken and roll up all the skin nice and tight, if you want you can use a butcher twine
6 : Place them all on a greased pan with parchment paper , then put it in a pre heated oven at 400F
7 : While they are half way done you can take them out and spoon some of the grease drippings and place it on top of the chicken, this will make the skin crispy tasty
8 : Stirr those bones and veggies in the pot, now add some flour ,salt & pepper and start whisking away at it and put it on high heat, the result should look similar to the picture below
9 : Its almost done now , can you smell it ?
10 : Ohhh yes! look at that chicken , don’t forget about the crispy goat cheese , its the best part !
