Ingredients : 1/2 cup olive oil , 3 tablespoons lime juice , 2 whole chipotle peppers in adobo , 2 cloves garlic , 1 teaspoon ground cumin , 1 teaspoon salt , 1/2 teaspoon black pepper , 6 boneless skinless chicken breasts , 6 whole Hatch or anaheim or poblano chiles , 1/2 pound monterey jack cheese cut into slices , Pico de gallo or salsa for serving , Beans , rice and a lot of love
1 : This is the result

2 : First , lets make the marinade for the chicken . You can totally use a bought marinade sauce or make something else of your own , up to you , this one is pretty simple, start with olive oil

3 : Squeeze some lime juice

4 : A bit of garlic i say

5 : Crack open a can of chipotle peppers

6 : And add a few big ones

7 : Add brown cumin , salt & pepper

8 : Whizz it together until its all mixed good with a little bit of pepper chunks

9 : Now grab some chicken breasts and throw them in a ziploc

10 : Pour in the marinade sauce

11 : Let the chicken marinate in the sauce for 4 hours . not less, so i’ll see you in 4

12 : Now its time for the chilies ! these are HAtch chiles which are a specific chile grown in New Mexico , but you can use other chiles for sure like Anaheim or Poblanos that you can find anywhere

13 : If you have a gas stove just place the chiles directly on the flame , if you dont you can just place them on a baking sheet and make sure to turn them as black and blistered as you can

14 : This can take a while…

15 : But the more black the chile is. the better

16 : Once they are all blackout , throw them in a big ziploc bag and close it up

17 : Let them sweat in the bag for a good 20 minutes

18 : If its been 20 minutes you can take them out of the bag

19 : and use a sharp knife to scrape off the black skin off – as much as you can

20 : Don’t go crazy , if there are a little black spots , its ok

21 : Now slice the chiles in half down the middle and remove the seeds and membranes

22 : Than lay them out flat like so

23 : If you don’t have the time or energy . you can use can chiles

24 : They don’t really look the same but…

25 : They can do just fine, for a pinch !

26 : Now its time to grill the chicken , you can use a grill pan , or an outside grill ..whatever you want – grill the first side for 4 minutes , then flip it over

27 : Lay on top of the chicken 2 chile halfs

28 : Now add some magic in the shape of a nice generous slice of Monterey Jack cheese…MmMmMmM

29 : Again, you can use any cheese you like, doesn’t have to be Jack

30 : Use an iron skillet to cover the whole dish so the cheese would melt , make sure to cook the chicken for 4-5 minutes, not more , so make sure the cheese is melted good by this time

31 : Oh my, this looks good enough to eat – keep reading if you want a side dish – and another idea for serving .

32 : You can serve on a plate..

33 : With some black beans

34 : Maybe cook some rice to go along with the chicken

35 : Now make a quick pico de gallo ( or simple salad )

36 : Throw some into the rice, for good taste

37 : And mix it together

38 : You can add this to the plate and you have a full meal

39 : Amazing right ? but maybe the chicken is missing something …
